Hearty Tomato and Lentil Soup {Vegan/Plantbased}

Soup has always been my favourite type of food to eat and make, and no I haven’t been deprived of good food, but there is nothing like a warm bowl of soup on a cold winters day.  Since we are midway through winter in the UK I have been needing ~cozy~ food after my long days at work. This hearty tomato and lentil soup is super comforting, rich and guess what, so so SO simple to make.

What you will need:

  • 1 onion
  • 4-5 cloves of garlic {you can add less if you ain’t-a garlic fan like me}
  • 2 medium size carrots
  • 1 tablespoon of flour
  • 1 cup of red split lentils
  • 500 ml – 800 ml of vegetable stock
  • 1 Knox Vegetable Flavour Stock Pot
  • 1 Tin of chopped tomatoes with herbs
  • a handful of fresh tomatoes
  • half a teaspoon of smoked paprika
  • 1 deep pan
  • a hand blender

Step One:

Firstly, saute the onion in a pan in oil {or water if you ~prefer~} for a couple of minutes and then add the garlic and cook for another minute. Cook until they are both soft.

Step Two:

Then add the carrots and cook for a couple of minutes before adding the tablespoon of flour. Make sure that all the onion, garlic and carrot mixture is covered and saute for about a minute.

Step Three:

The add your tin tomatoes, stock, red split lentils, stock pot, fresh tomatoes and the paprika. Then leave to simmer for about 30 mins. If the lentils absorb all the water {DON’T PANIC}add more to create the kind of consistency you want, I like my soups really thick so I don’t add that much extra water.  However, the more water/stock you add the thinner the soup will be!

Step Four:

Once the lentils are cooked and the carrots are soft blend the soup altogether and ~voila~ it is ready to serve. Make sure it is piping hot and serve with whatever kind of bread you desire. Although, it goes best with seedy bread or a freshly baked baguette. I served mine with homemade garlic bread, but serve with whatever you fancy!

This is super simple, very tasty and the best part all made in one pot {so minimal washing up…… hallelujah}. Perfect for the cold winter nights the UK is currently experiencing.
